Why is restaurant music so loud?
Because operators believe a loud room turns tables faster. The one field experiment that put a number on restaurant volume found the tab ran about 16 percent higher when the volume came down.
Nobody in a restaurant is measuring the music. Owners set the level, designers specify the hard surfaces that make it carry, and managers nudge it up over the course of a night without writing anything down. The volume is a decision, made by people, and almost never checked against what it does to the check.
The theory operators are running on
Ask why the room is loud and you get a version of the same answer: energy, and turnover. A loud room reads as busy, a busy room reads as good, and people who cannot hear each other finish and leave. More parties through the same forty seats.
That theory has one testable half. Loud music really does shorten how long people stay. The half nobody checks is whether the shorter visit is worth more money.
The one experiment that put a number on it
In 2003, Lammers ran a field experiment at an oceanside restaurant in Ventura, California, across 80 sets of patrons. Each group got either soft rock or classical radio, played at either a loud or a soft level. The measure was the tab.
Soft volume produced a mean tab of $21.63. Loud volume produced $18.57. That is about a 16 percent difference on the same food, in the same room, from a knob.
The second finding is the one people skip. Genre made no difference at all. Soft rock and classical performed the same. The dial that moved money in that room was loudness, and the dial everyone argues about did nothing.
Loud does move people, just not toward spending
The turnover half of the theory has held up since 1966, when Smith and Curnow played music at different volumes in a supermarket. Louder music shortened the visit. It left the amount spent untouched.
Read those two studies together and the picture is unglamorous. Turning the music up buys you exits. It does not buy you tickets. If the seats are full and there is a line at the door, you are selling minutes and the exit is the product. If there is no line, you have shortened the visit and collected less for it.
Where the studies disagree
I said genre did nothing. In a different room, it did something.
North, Shilcock and Hargreaves ran classical, pop, and silence across 18 evenings in a British restaurant in 2003 and tracked spend per head line by line. Classical produced higher spending than both pop and no music, with the effect showing up on starters, coffee, total food and overall spend. Pop and silence performed about the same as each other, which is its own small insult to whoever built the playlist.
So one restaurant study says style is irrelevant and another says style is the whole effect. Both are real, both are published, and neither has been run enough times in enough rooms to settle it. What separates them is probably the rooms: a casual oceanside restaurant and a British restaurant serving a coursed menu are not asking their guests for the same thing. Volume and style are two different dials, and the honest position is that we know more about the first than the second.
What has actually held up: time
The finding that keeps replicating is not about volume at all. Milliman put slow-tempo music in a restaurant in 1986 and diners stayed about 11 minutes longer. Bar revenue rose roughly 40 percent. Food spend stayed flat. The extra minutes turned into drinks and nothing else.
Caldwell and Hibbert got the time half again in 1999 with a tighter design, jazz from a single artist so that style could not confound tempo, and found slow music produced significantly longer dining. Their spending gains did not track the extra time. It was two tables and a conference paper, so hold it loosely, but the shape matches: slow music reliably buys minutes, and the minutes only convert where there is something to sell into them.
A restaurant with a bar has that something. A counter-service room at lunch does not.
The actual point
A loud dining room is a real strategy with a real price. You are choosing to sell fewer minutes per party, and that choice pays only if another party is already waiting to buy the seat. Most rooms that are loud are not that busy, most nights.
The version of this question I get asked most is what to play. The evidence says start with how loud, because that is the setting with the clearest number attached and the one anybody can change tonight.
